Our delicious Streaky Bacon is crafted the old-fashioned way. It’s certified by Pigcare™, which we rate as a high standard for animal welfare. Our Streaky Bacon is dry-cured and manuka-smoked and no water is added which means there’s only a little natural shrinkage during cooking. We have three islands but the Greeks have over 1,400. On many of them they enjoy a traditional sausage called Loukaniko. ‘Greek Sausage’ is much easier to say but it’s the same sausage. To ensure our locally-crafted Greek Sausage is as authentic as possible we add a generous splash of white wine and orange zest. When adventurous 16th century traders brought a new spice called ‘paprika’ all the way from America to Spain, they started a sausage revolution. Spanish sausage makers called the spice ‘pimentón’, and discovered it added a delicious smoky flavour and beautiful red hue to their sausages. 400 years later, we’re doing the same in New Zealand. Our chorizo is based on a traditional recipe and it’s deliciously tangy whether fried, grilled or baked.

Germans take sausages seriously. Their proud history of sausage-making stretches back to the thirteenth century, possibly even earlier than that. Some say that there are at least forty types of bratwurst. Make that at least forty-one: our version is made right here in New Zealand from an original recipe, and it’s full of rich Germanic character. Originating in South Africa, its name comes from two Afrikaans words: ‘boer’ meaning farmer and ‘wors’ meaning sausage. Boerewors is for real meat lovers. For a start, a boerewors must contain at least 90% meat with the other 10% made up of spices, including coriander. Anything less, and it’s not a boerewors. Our boerewors is made to an authentic recipe in the classic boerewors tradition. Simply grill, bake, fry or barbecue.

Cabanossi is a type of dry sausage from Poland. Think of it as a milder relative to the salami. Our choice cabanossi is made with home-grown pork and beef which we’ve lightly seasoned with marjoram and garlic before smoking.
