Our bacon is crafted using free-range 100% New Zealand pork, single-sourced from a farm certified by Pigcare™ New Zealand, trusted for animal welfare. We dry-cure and manuka-smoke our bacon, and we add absolutely no water, so there’s only minimal natural shrinkage when you cook it. And the best thing is you’ll enjoy the exquisite flavour and texture of proper, traditional bacon.

Some like it hot. Others like it much hotter. If you’re a fan of full-on fiery flavours, we think you’ll love our merguez. The recipe originates in North Africa where merguez sausages are a traditional favourite of the Berber people. The intense taste comes from a hot chili pepper paste called ‘harissa’ which is made with baklouti pepper, serrano peppers, chili peppers, spices and herbs such as garlic and coriander. Merguez is deliciously exotic whether fried, grilled or baked.

We have three islands but the Greeks have over 1,400. On many of them they enjoy a traditional sausage called Loukaniko. ‘Greek Sausage’ is much easier to say but it’s the same sausage. When adventurous 16th century traders brought a new spice called ‘paprika’ all the way from America to Spain, they started a sausage revolution. Spanish sausage makers called the spice ‘pimentón’, and discovered it added a delicious smoky flavour and beautiful red hue to their sausages. 400 years later, we’re doing the same in New Zealand. Originating in South Africa, its name comes from two Afrikaans words: ‘boer’ meaning farmer and ‘wors’ meaning sausage. Boerewors is for real meat lovers. Cabanossi is a type of dry sausage from Poland. Think of it as a milder relative to the salami. Our choice cabanossi is made with home-grown pork and beef which we’ve lightly seasoned with marjoram and garlic before smoking. Slice our cabanossi into delicious bite-sized discs and enjoy cold as an appetiser, snack on it or spice up your next get-together by serving our cabanossi with cheese and crackers.

Sharp-eyed lovers of quality smallgoods will notice that Harrington’s makes two Toulouse sausages: ‘fresh’ and ‘smoked’. This smoked version, like its fresh relative, is inspired by the superb sausages crafted in the city of Toulouse, France. Apart from being manuka-smoked, our smoked Toulouse Sausage has ingredients of its own, including garlic for a beautifully French flavour. Très bien. Enjoy it fried, grilled, barbecued or braised.

Holland may be famous for cheese and tulips, but it can also hold its own when it comes to sausages. Rookwurst is a traditional dutch sausage. Ours is based on an old-fashioned recipe. First the pork is blended with salt and spices, including ginger. Then we smoke it over smouldering manuka chips in our very own smoking machine. The result is an authentic Dutch delight that’s delicious grilled, fried or baked.

In Europe that stretches from the 5th to the 15th century, which means, by our calculations, the frankfurter could be around 1600 years old. It must be good because it’s been loved for that long. Many of us would have first enjoyed it as a simple hot dog, and some say that’s still the best way.

When adventurous 16th century traders brought a new spice called ‘paprika’ all the way from America to Spain, they kicked off a sausage revolution. Spanish sausage makers called the spice ‘pimentón’, and found they could use it to add a delicious smoky flavour and beautiful red colour to their sausages. 400 years later, we’re doing the same in New Zealand. Our chorizo is based on a traditional recipe. Deliciously tangy whether fried, grilled or baked.
